Giovanni Baj Macario

Count Giovanni Baj Macario di Castignano was a passionate ambassador of the beauty and cultural richness of Tuscany, so much so that he decided to relocate, with his whole family, from northern Italy to the historic Castello del Trebbio near Florence. From then on, the Count explored every corner of Tuscany; his love for this land, ever-famous for its harmonious landscapes, vineyards, and centuries-old winemaking tradition, increased journey after journey.

In memory of the Count

To honor the memory of the Count di Castignano, his daughter Anna and her husband Stefano Casadei, decided to create a line that would represent the most significant varieties and denomination of Tuscany. Their wish is to recount the enduring bond between Giovanni Baj Macario and this land of great winemaking tradition with each bottle of Conte di Castignano.

One region, many different climates

In Tuscany, the climate varies widely from one area to another, thus creating very distinctive growing environments. Along the coast of Maremma, the Mediterranean climate imparts freshness and vibrancy. Inland, the temperature ranges favor an elegant structure, while cool summer nights preserve the grapes' natural acidity. This climatic diversity gives our wines unique and special characteristics: from the soft fruity tones of Maremma wines to the complexity of inland wines.

Chianti

Chianti

Cradle of the Tuscan winemaking heritage, endowed with clay-limestone soils and characterized by significant temperature ranges, it is the ideal area for growing vines. This area delivers one of the highest oenological expressions of Sangiovese, a historic native grape variety that takes on different personalities and facets depending on the microclimate where it grows: in Chianti, it yields wines with a fruity, structured, and harmonious olfactory profile, marked acidity and lively tannins.
Both the Chianti DOCG and Chianti Riserva Conte di Castignano stand as celebrations of Tuscany’s most iconic wine.

CHIANTI DOCG

A lively, fresh Sangiovese.
On the nose, captivating aromas of red berries, and floral notes enhanced by hints of spice.
Enveloping on the palate, with well-integrated structured tannins and a good freshness on the finish.

Pairings

Excellent with appetizers, such as traditional Tuscan cured meats and crostini, and fresh or medium-aged cheese.
Ideal with grilled meat and pasta dishes with meat ragout.

CHIANTI DOCG RISERVA

The sheer strength and elegance of Sangiovese: fascinating nose, with notes of dark cherry and spice.
Aging, it unleashes distinct balsamic notes.
Firm and gentle on the palate, with well-balanced tannins.

Pairings

Pasta dishes with meat ragout, stewed game, and grilled meat. Aged 10 years or more, it turns into an excellent meditation wine.

Chianti Classico

Chianti Classico

In 1716, in the hills that lie between the fascinating cities of Florence and Siena, Cosimo III de' Medici formally laid down the territorial boundaries of Chianti Classico. To this day, only the wines produced in the relatively small area which comprises the eight municipalities that meet the standards set by the production regulations, can bear the name “Chianti Classico” and bear the historic black rooster label. This area’s clayey-limestone soils and marked temperature ranges make it ideal for growing Sangiovese.

CHIANTI CLASSICO DOCG

A wine with an authentic, harmonious and elegant character, with a brilliant ruby red colour.
The nose displays floral notes with hints of cherry and sweet spice.
The palate is well structured, supported by lively yet velvety tannins, with a fresh and persistent finish.

Pairings

Suitable for meat courses, mushroom risotto, red meat cooked with spices, roasts and medium-aged cheeses.

Montalcino

Montalcino

The rural landscape of Montalcino, which lies nestled among the rolling hills of Val d’Orcia, is unique and exceptionally beautiful. Its centuries-old vineyards and historic center have been a UNESCO World Heritage Site for years. The clayey limestone hillside where the production area lies is mineral-rich and subject to significant temperature fluctuations; these features contribute to making wines characterized by distinctive and enveloping aromas.
Brunello and Rosso di Montalcino, widely regarded as two of the noblest and finest wines of the region, rank among the ambassadors of Italian wine in the world.

ROSSO DI MONTALCINO

A fresh, lively, ruby-red wine with violet highlights. The nose is rich in fruity scents complemented by minty nuances.
On the palate, it is pleasingly crisp, with an enveloping structure that conveys a pleasantly persistent mouthfeel.

Pairings

Works beautifully with cured meats, tagliatelle with meat ragout, and mushroom risotto. Excellent with T-bone steak alla fiorentina, grilled meat, and roasts.

BRUNELLO DI MONTALCINO

A rich, elegant Brunello with a brilliant ruby-red color enhanced by garnet-hued highlights. On the nose, it displays distinct overtones of ripe cherry and strawberry, combined with hints of licorice and tobacco. Broad and heady on the palate, with a mouthfeel marked by well-balanced tannins.

Pairings

Splendid with a variety of dishes, for instance tortelli alla Mugellana with meat ragout. Excellent with game, braised meats, and roast lamb.

Maremma

Maremma

Tuscany's seafaring vocation finds its perfect setting along the Tyrrhenian coast, in an area devoted to grape growing and wine production since the Etruscan era. In this archipelago of land and sea, the pine forests and clear waters, breathtaking views, and villages perched high atop the hillsides intertwine creating enchanting landscapes. The climate, tempered by the sea breezes and blessed by the Mediterranean sunshine, is ideal for viticulture. Here, winemakers produce distinctive wines, from crisp whites to full-bodied reds, that reflect the authenticity of this region.

A wine that fully expresses the distinctive scents of the Mediterranean scrub.
The nose displays notes of citrus and yellow flowers, while the flavor features a distinct freshness, with an intense, savory finish.

Ideal as an apéritif and served with fish or seafood dishes. Excellent with white meat and fresh cheese.

TOSCANA IGT CILIEGIOLO

Ruby-red, fresh, and fragrant.
The nose displays an elegant bouquet rich in floral and fruity notes, especially marasca cherry and prune.
The mouthfeel is soft and well-balanced, with round tannins and a persistent finish.

Ideal with meat dishes, especially red meat roasts, game, and braised meat.
Excellent with cured meats and seasoned cheese.

TOSCANA IGT ROSSO

A red wine with intense aromas of red berries and hints of vanilla. Un vino rosso dagli aromi intensi di bacche rosse e punte di vaniglia. Soft on the palate, with a full, supple, fresh mouthfeel and well-rounded tannins.
Long, mildly sweetish, finish.

Pairings

Ideal with meat-based first courses and bold-flavored dishes, such as most traditional Mediterranean specialties.

Our farming methods and winemaking practices do not include synthetic chemicals in any phase, from growing in the vineyard to processing raw materials in the winery.
